Super Moist Vegan Lemon Loaf

  • ¼ cup vegan butter, melted
  • 1 cup almond milk
  • ½ cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • 2 ¼ cups gluten free all purpose flour, or regular flour
  • 1 ½ cups powdered sugar
  • ¼ cup vegan butter
  • 4 oz vegan cream cheese

Instructions

  • Preheat the oven to 375.
  • Mix melted vegan butter, almond milk, lemon juice, vanilla, and sugar. Then, add baking soda and baking powder. Mix.
  • Quickly add the flour and mix until combined.
  • Pour the batter into a greased loaf pan and bake for 45 minutes.
  • While the loaf is baking, use an electric hand mixer to mix the vegan cream cheese icing ingredients and spread over the warm loaf.
