- •1 cup almond milk
- •½ cup lemon juice
- •1 teaspoon vanilla extract
- •1 cup sugar
- •1 teaspoon baking soda
- •1 ½ teaspoons baking powder
- •2 ¼ cups gluten free all purpose flour, or regular flour
- •1 ½ cups powdered sugar
- •¼ cup vegan butter
- •4 oz vegan cream cheese
Instructions
- Preheat the oven to 375.
- Mix melted vegan butter, almond milk, lemon juice, vanilla, and sugar. Then, add baking soda and baking powder. Mix.
- Quickly add the flour and mix until combined.
- Pour the batter into a greased loaf pan and bake for 45 minutes.
- While the loaf is baking, use an electric hand mixer to mix the vegan cream cheese icing ingredients and spread over the warm loaf.
