- •1 head broccoli, florets and chooped stalks
- •½ small white onion, diced
- •2 cloves garlic, minced
- •salt and pepper, to taste
- •1 cup water
- •2 tablespoons butter
- •shredded white cheddar
- •greek yogurt
Instructions
- In a pan on medium heat, sauté onion in oil until translucent. Add garlic, salt, and pepper and saute.
- Add 1 cup of water, add broccoli pieces, and if needed, add more water to ensure broccoli is covered.
- Cook for 8 minutes or until broccoli starts to soften.
- Blend the mixture well using an immersion blender, add butter, and stir to melt.
- Season and garnish to taste. Serve warm alongside toasted sourdough bread.
