Weekday Broccoli Soup

Ingredients

  • 1 head broccoli, florets and chooped stalks
  • ½ small white onion, diced
  • 2 cloves garlic, minced
  • salt and pepper, to taste
  • 1 cup water
  • 2 tablespoons butter
  • shredded white cheddar
  • greek yogurt

Instructions

  • In a pan on medium heat, sauté onion in oil until translucent. Add garlic, salt, and pepper and saute.
  • Add 1 cup of water, add broccoli pieces, and if needed, add more water to ensure broccoli is covered.
  • Cook for 8 minutes or until broccoli starts to soften.
  • Blend the mixture well using an immersion blender, add butter, and stir to melt.
  • Season and garnish to taste. Serve warm alongside toasted sourdough bread.
  • Enjoy!
