Vegan Spaghetti With Pumpkin Sauce

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • ½ lb pumpkin, chopped
  • ½ teaspoon salt
  • 2 cloves garlic, grated
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried tarragon
  • ¼ teaspoon cinnamon powder
  • 1 onion, sliced
  • 4 cups passata sauce, or crushed tomatoes
  • 1 teaspoon paprika

Instructions

  • Heat a pan with oil, add the veg, and sauté till golden.
  • Blitz the sautéed veg along with the Passata till smooth.
  • Sauté the sliced onion till soft in oil.
  • Add the puréed veg and allow to simmer on low.
  • Add the oregano, tarragon, paprika, salt and pepper and continue to simmer till the veg purée cooks to sauce consistency.
  • Serve atop cooked spaghetti and enjoy.
