- •2 tablespoons olive oil
- •1 onion, chopped
- •1 carrot, chopped
- •1 celery stalk, chopped
- •½ lb pumpkin, chopped
- •½ teaspoon salt
- •2 cloves garlic, grated
- •½ teaspoon dried oregano
- •¼ teaspoon dried tarragon
- •¼ teaspoon cinnamon powder
- •1 onion, sliced
- •4 cups passata sauce, or crushed tomatoes
- •1 teaspoon paprika
Instructions
- Heat a pan with oil, add the veg, and sauté till golden.
- Blitz the sautéed veg along with the Passata till smooth.
- Sauté the sliced onion till soft in oil.
- Add the puréed veg and allow to simmer on low.
- Add the oregano, tarragon, paprika, salt and pepper and continue to simmer till the veg purée cooks to sauce consistency.
- Serve atop cooked spaghetti and enjoy.
