- •1 (15 ounce) can black beans, rinsed and drained
- •1 (15 ounce) can pinto beans, rinsed and drained
- •1 cup chopped ripe papaya
- •¾ cup water
- •¾ cup chopped red onion, divided
- •¼ cup orange juice
- •¼ cup chopped green onions
- •1 (4 ounce) can chopped green chilies
- •2 tablespoons hot salsa
- •2 tablespoons Cajun seasoning, or more to taste
- •2 tablespoons Italian seasoning
- •1 tablespoon garlic powder
- •1 teaspoon grated orange zest, or to taste
- •1 medium avocado, chopped
- •2 tablespoons chopped fresh cilantro
Instructions
- Combine black beans, pinto beans, papaya, water, 1/2 cup red onion, orange juice, green onions, green chiles, salsa, Cajun seasoning, Italian seasoning, garlic powder, and orange zest in a pot over medium heat; heat to almost boiling. Reduce heat and simmer for 10 to 15 minutes.
- Gently toss remaining 1/4 cup red onion, avocado, and cilantro in a bowl; don't mash the avocado.
- Ladle chili into 4 bowls and sprinkle with mixed topping.
