  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt
  • 1 cup blueberries
  • 1 teaspoon lemon zest
  • 0.33333334326744 cup shortening
  • 0.75 cup milk
  • 1 egg

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  • Sift flour, sugar, baking powder, and salt together in a large bowl. Combine blueberries and lemon zest in another bowl.
  • Beat shortening in a third bowl until creamy. Stir shortening mixture into flour mixture, alternating with milk, then beat until well combined, about 2 minutes. Add egg and beat until incorporated, about 1 minute. Fold in blueberries, then pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes.
