Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
- Sift flour, sugar, baking powder, and salt together in a large bowl. Combine blueberries and lemon zest in another bowl.
- Beat shortening in a third bowl until creamy. Stir shortening mixture into flour mixture, alternating with milk, then beat until well combined, about 2 minutes. Add egg and beat until incorporated, about 1 minute. Fold in blueberries, then pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 50 minutes.
