  • ¾ cup black beans, drained and rinsed
  • 1 cup broccoli, steamed
  • ½ cup corn
  • 2 tablespoons guacamole
  • ½ cup tomato, diced
  • fresh cilantro, to taste

Instructions

  • Pierce air sweet potato with a fork and microwave on high for 9-12 minutes until fully cooked.
  • Top with black beans, broccoli, corn, guacamole, tomatoes, and cilantro.
  • Enjoy!
