Carrot & Chickpea Veggie Burger

Ingredients

  • 15.5 oz canned chickpeas, drained and rinsed
  • 1 ½ cups oats
  • ½ cup shredded carrots
  • ½ cup diced red onion
  • 1 egg
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon olive oil
  • ½ lemon, juiced
  • 1 tablespoon olive oil
  • whole wheat burger bun
  • sliced tomato
  • 1 head butter lettuce
  • sliced red onion
  • sliced avocado
  • mustard, to taste

Instructions

  • In a food processor, combine the chickpeas, oats, carrots, red onion, egg, salt, pepper, garlic powder, and olive oil. Blend just until combined.
  • Add the lemon juice and blend again until well-combined.
  • Scoop out a handful of the mixture at a time and form into patties.
  • Heat a tablespoon of olive oil over medium-high heat.
  • Cook the patties for 4-5 minutes on each side, or until golden brown.
  • Assemble with your favorite burger toppings.
  • Enjoy!
