- •15.5 oz canned chickpeas, drained and rinsed
- •1 ½ cups oats
- •½ cup shredded carrots
- •½ cup diced red onion
- •1 egg
- •1 teaspoon salt
- •½ teaspoon pepper
- •½ teaspoon garlic powder
- •1 teaspoon olive oil
- •½ lemon, juiced
- •1 tablespoon olive oil
- •whole wheat burger bun
- •sliced tomato
- •1 head butter lettuce
- •sliced red onion
- •sliced avocado
- •mustard, to taste
Instructions
- In a food processor, combine the chickpeas, oats, carrots, red onion, egg, salt, pepper, garlic powder, and olive oil. Blend just until combined.
- Add the lemon juice and blend again until well-combined.
- Scoop out a handful of the mixture at a time and form into patties.
- Heat a tablespoon of olive oil over medium-high heat.
- Cook the patties for 4-5 minutes on each side, or until golden brown.
- Assemble with your favorite burger toppings.
