Healthy Broccoli Cheddar Tots

  • 1 large head broccoli
  • ⅓ cup panko bread crumbs
  • ⅓ cup chopped fresh chives
  • ⅔ cup shredded sharp cheddar cheese
  • 1 clove garlic, minced
  • ½ teaspoon kosher salt, divided
  • ¼ teaspoon freshly ground black pepper
  • 1 large egg

Instructions

  • Grate the broccoli on the large holes of a box grater.
  • Transfer the grated broccoli to a medium bowl and season with ¼ teaspoon of the salt, then toss to combine. Let the broccoli sit for 20 minutes until the salt has drawn out some of the moisture.
  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Pour the broccoli into a clean kitchen towel and twist to squeeze out as much liquid as possible
  • Return the grated broccoli to the bowl and add the panko, chives, cheddar, garlic, remaining ¼ teaspoon of salt, the black pepper, and egg. Mix until well combined.
  • Shape the mixture into 15 tots and place on the prepared baking sheet.
  • Bake for 20-24 minutes, flipping halfway through, until golden brown.
  • Serve with your choice of dipping sauce.
  • Enjoy!
