- •1 lb lean ground turkey
- •1 oz taco seasoning
- •salt, to taste
- •pepper, to taste
- •28 oz canned diced tomatoes, drained
- •tortilla of choice
- •shredded lettuce
- •shredded cheese
- •sliced avocado
Instructions
- Heat a large skillet over high heat. Once hot, add a drizzle of oil to coat the bottom of the pan. Add the ground turkey and break apart with a spatula. Add the taco seasoning, salt, and pepper and stir, cooking until the meat has browned and is fully cooked through.
- Stir in the tomatoes. Bring to a gentle simmer and cook for about 5 minutes, then remove from the heat.
- Scoop the turkey mixture into tortillas and top with shredded lettuce, shredded cheese, and sliced avocado.
