  • neutral oil, as needed
  • 1 lb lean ground turkey
  • 1 oz taco seasoning
  • salt, to taste
  • pepper, to taste
  • 28 oz canned diced tomatoes, drained
  • tortilla of choice
  • shredded lettuce
  • shredded cheese
  • sliced avocado

Instructions

  • Heat a large skillet over high heat. Once hot, add a drizzle of oil to coat the bottom of the pan. Add the ground turkey and break apart with a spatula. Add the taco seasoning, salt, and pepper and stir, cooking until the meat has browned and is fully cooked through.
  • Stir in the tomatoes. Bring to a gentle simmer and cook for about 5 minutes, then remove from the heat.
  • Scoop the turkey mixture into tortillas and top with shredded lettuce, shredded cheese, and sliced avocado.
  • Enjoy!
