Ingredients

  • 1 medium tomato
  • kosher salt, to taste
  • 1 ½ teaspoons olive oil
  • ¼ Spam®, sliced in half lengthwise (1 12 ounce can (340 G))
  • 2 slices sourdough bread, lightly toasted
  • 2 tablespoons mayonnaise
  • 2 pieces green leaf lettuce

Instructions

  • Slice the tomato into thick rounds. Season the tomato rounds with salt.
  • Heat the olive oil in a small nonstick skillet over medium/medium-high heat. Add the Spam slices and cook for 2–3 minutes per side, until golden brown and crispy.
  • Evenly spread the mayonnaise on one side of each slice of toasted bread.
  • Add the lettuce, tomato slices, and crispy Spam to one slice of bread.
  • Top with the remaining piece of bread, mayo side down. Cut in half.
  • Enjoy!
