- •1 medium tomato
- •kosher salt, to taste
- •1 ½ teaspoons olive oil
- •¼ Spam®, sliced in half lengthwise (1 12 ounce can (340 G))
- •2 slices sourdough bread, lightly toasted
- •2 tablespoons mayonnaise
- •2 pieces green leaf lettuce
Instructions
- Slice the tomato into thick rounds. Season the tomato rounds with salt.
- Heat the olive oil in a small nonstick skillet over medium/medium-high heat. Add the Spam slices and cook for 2–3 minutes per side, until golden brown and crispy.
- Evenly spread the mayonnaise on one side of each slice of toasted bread.
- Add the lettuce, tomato slices, and crispy Spam to one slice of bread.
- Top with the remaining piece of bread, mayo side down. Cut in half.
- Enjoy!
