  • 2 granny smith apples
  • ¼ cup maple syrup
  • 1 ½ tablespoons coconut oil, melted
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup rolled oats
  • 2 tablespoons all purpose flour
  • 2 tablespoons raisin
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon kosher salt
  • vanilla ice cream, for serving
  • caramel sauce, for serving

Instructions

  • Preheat the air fryer to 350°F (180°C).
  • Cut the apples in half through the stems, then use a spoon to scoop out the core and seeds.
  • In a small bowl, mix together the maple syrup, melted coconut oil, cinnamon, nutmeg, and ginger.
  • Brush the apples all over with the spice oil, spooning any remaining oil into the hollow cores.
  • Set the apples, cut-side up, in the air fryer basket and cook until tender and the tops are golden brown, about 8 minutes.
  • Meanwhile, make the crumble topping: In a small bowl, mix together the oats, flour, raisins, melted coconut oil, maple syrup, cinnamon, nutmeg, ginger, and salt.
  • Spoon the crumble topping into the center of each apple half, dividing evenly. Air-fry for another 1–2 minutes, or until the crumble is golden brown.
  • Transfer the apples to plates and serve warm with vanilla ice cream, a drizzle of caramel sauce, and a dusting of ground cinnamon.
