  • 8 cups diced zucchini
  • 1 red bell pepper, chopped
  • 1 cup cornflakes cereal
  • 1 cup shredded Cheddar cheese
  • 0.5 cup olive oil
  • 1 teaspoon dried basil
  • 2 eggs, beaten
  • salt and pepper to taste

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish.
  • Combine zucchini, bell pepper, cornflakes, cheese, oil, basil, and eggs in a large bowl. Season with salt and pepper to taste. Spread evenly into the prepared baking dish.
  • Bake in the preheated oven until top is golden brown, about 45 minutes.
