  • 6 slightly firm pears
  • 5 cups water
  • 2 cups sugar
  • ¾ cup rum
  • 1 teaspoon vanilla extract
  • vanilla ice cream, to taste
  • ⅓ cup melted dark chocolate

Instructions

  • Peel the pears and cut the bottoms out, but leave the stems intact.
  • Mix the water, sugar, rum, and vanilla together in a large pot over medium heat. Add the pears, cover the pot, and simmer for about 40 minutes, turning occasionally, until the pears are soft and golden.
  • Scoop out the pears and place upright on a serving dish. If desired, cook the poaching liquid a bit longer until syrupy, then ladle over the pears. Serve with vanilla ice cream and a drizzle of melted chocolate.
