- •3 cups sliced mushrooms
- •2 large eggs, beaten
- •1 cup seasoned bread crumbs
- •4 skinless, boneless chicken breast halves
- •2 tablespoons butter
- •6 ounces mozzarella cheese, sliced
- •0.75 cup chicken broth
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Place 1/2 of the mushrooms in a 9x13-inch pan.
- Add eggs to a shallow dish. Add bread crumbs to a second shallow dish. Dip chicken into beaten eggs, then roll in bread crumbs. Melt butter in a skillet over medium heat. Brown chicken on both sides.
- Place chicken on top of mushrooms in the pan. Arrange remaining mushrooms over chicken and top with mozzarella cheese. Add chicken broth to the pan.
- Bake in the preheated oven until chicken is no longer pink and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
