  • 3 cups sliced mushrooms
  • 2 large eggs, beaten
  • 1 cup seasoned bread crumbs
  • 4 skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 6 ounces mozzarella cheese, sliced
  • 0.75 cup chicken broth

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place 1/2 of the mushrooms in a 9x13-inch pan.
  • Add eggs to a shallow dish. Add bread crumbs to a second shallow dish. Dip chicken into beaten eggs, then roll in bread crumbs. Melt butter in a skillet over medium heat. Brown chicken on both sides.
  • Place chicken on top of mushrooms in the pan. Arrange remaining mushrooms over chicken and top with mozzarella cheese. Add chicken broth to the pan.
  • Bake in the preheated oven until chicken is no longer pink and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
