Leftover Ham Croquettes

  • vegetable oil, for frying
  • 3 cups mashed potatoes
  • 1 cup shredded white cheddar cheese
  • 1 cup diced ham
  • ½ cup all-purpose flour
  • 3 large eggs, beaten
  • 1 ½ cups bread crumbs

Instructions

  • Fill a medium pot halfway with vegetable oil. Heat over medium heat until the temperature reaches 350°F (180°C).
  • In a medium bowl, combine the mashed potatoes and shredded white cheddar cheese.
  • Flatten ¼–⅓ cup of the mashed potato mixture into a disc in the palm of your hand, then place 4–6 pieces of ham in the center. Roll into a tight ball, completely encasing the ham in the potatoes. Repeat with the remaining mashed potato mixture and ham to make more balls.
  • Add the flour, eggs, and bread crumbs to 3 separate medium bowls.
  • Coat each potato ball in the flour, then dip in the eggs, then cover completely with the bread crumbs.
  • Fry the croquettes, 2–3 at a time, in the hot oil for 3 minutes, or until golden brown. Transfer to a paper towel-lined plate to drain while you repeat with the remaining croquettes.
  • Serve warm.
  • Enjoy!
