  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 teaspoon red pepper flakes
  • 1 lb ground beef
  • 4 cloves garlic, minced
  • 1 tablespoon brown sugar
  • 1 tablespoon cumin
  • 1 tablespoon cilantro powder
  • 3 tablespoons chili powder
  • 3 ½ cups tomato, diced
  • 2 tablespoons tomato paste
  • 2 ½ cups red kidney bean, washed and dried
  • 1 green pepper, diced
  • 2 cups whole kernel corn

Instructions

  • In a large pan, cook the onions and pepper flakes in olive oil until the onions are translucent. Then, add the beef and garlic and saute until cooked.
  • Add the brown sugar, cumin, cilantro and chili powder. Mix, then add the diced tomatoes and tomato paste. Lower the heat and simmer for 20 minutes.
  • Add the red kidney beans and cool for another 20 minutes.
  • Add the green pepper and corn. Simmer together for 5 minutes.
  • Serve.
