Ingredients

  • 4 eggs
  • 1.5 cups all-purpose flour
  • 0.5 cup cornmeal
  • 1 tablespoon lemon pepper
  • 6 (6 ounce) fillets catfish
  • 0.25 cup margarine

Instructions

  • Whisk eggs in a shallow bowl. Combine flour, cornmeal, and lemon-pepper seasoning in another shallow bowl.
  • Working one at a time, dip fillets in egg, then dredge in flour until well coated.
  • In a large frying pan, melt margarine over medium-high heat. Pan-fry breaded catfish in batches until golden brown, about 3 minutes per side. Drain briefly on paper towels and serve.
