- •1 pound catfish fillets
- •2.5 cups coarsely crushed buttery round crackers
- •1 medium onion, chopped
- •1 large egg
- •1 tablespoon creamy salad dressing (e.g. Miracle Whip)
- •1 teaspoon prepared yellow mustard
- •0.5 teaspoon Old Bay Seasoning TM, or to taste
- •0.25 cup vegetable oil for frying, or as needed
Instructions
- Place catfish in a saucepan with enough water to cover; bring to a boil. Cook until fish flakes easily with a fork. Remove from heat and drain water.
- Mash fish in the saucepan. Stir in crackers, onion, egg, salad dressing, mustard, and Old Bay until evenly blended. Form into 8 patties.
- Heat oil in a large, heavy skillet over medium-high heat. Fry patties in hot oil until golden brown on both sides. An instant-read thermometer inserted into the center of a patty should read at least 145 degrees F (63 degrees C). Drain on a paper towel-lined plate and serve hot.
