Ingredients

  • ¼ onion, finely chopped
  • 2 cloves garlic, crushed
  • ½ cup baby plum tomatoes, halved, or regular tomatoes, chopped into small pieces
  • ⅓ cup chopped fresh basil, plus a few sprigs to decorate
  • ⅓ cup Chopped fresh parsley
  • 5 oz linguine, or spaghetti
  • salt, to taste
  • pepper, to taste
  • 1 pinch red pepper flakes
  • 2 tablespoons olive oil
  • 2 ½ cups cold water
  • parmesan cheese, to garnish

Instructions

  • Add the onion, garlic, tomatoes, basil, parsley, linguine, salt, pepper, red pepper flakes, olive oil, and water to a large pot. Cook over a high heat for 2 minutes, submerging the pasta into the water once it’s soft enough.
  • Reduce the heat to medium-low, tossing and stirring continuously until the liquid reduces down into a thick sauce.
  • Serve the pasta topped with Parmesan and more basil.
  • Enjoy!
