Ingredients

- •¼ onion, finely chopped
- •2 cloves garlic, crushed
- •½ cup baby plum tomatoes, halved, or regular tomatoes, chopped into small pieces
- •⅓ cup chopped fresh basil, plus a few sprigs to decorate
- •⅓ cup Chopped fresh parsley
- •5 oz linguine, or spaghetti
- •salt, to taste
- •pepper, to taste
- •1 pinch red pepper flakes
- •2 tablespoons olive oil
- •2 ½ cups cold water
- •parmesan cheese, to garnish
Instructions
- Add the onion, garlic, tomatoes, basil, parsley, linguine, salt, pepper, red pepper flakes, olive oil, and water to a large pot. Cook over a high heat for 2 minutes, submerging the pasta into the water once it’s soft enough.
- Reduce the heat to medium-low, tossing and stirring continuously until the liquid reduces down into a thick sauce.
- Serve the pasta topped with Parmesan and more basil.
