- •2 boneless, skinless chicken breasts
- •ground black pepper, to taste
- •ground cumin, to taste
- •1 teaspoon neutral oil
- •½ onion, sliced
- •½ can cherry tomatoes
- •⅖ cup water
- •½ can chickpeas, drained and rinsed
- •1 tablespoon harissa paste
- •1 teaspoon honey
- •1 courgette, sliced
Instructions
- Season the chicken with pepper and cumin.
- Heat the oil in a large, high-walled pan over medium-low heat. Add the chicken and onion and cook for 3-4 minutes, stirring and turning occasionally.
- Add the cherry tomatoes, water, chickpeas, harissa, honey, and courgette. Simmer for 15 minutes, stirring occasionally, until the sauce thickens.
