- •1 teaspoon lemon juice
- •2 slices multigrain toast, divided
- •1 teaspoon mayonnaise
- •1 persian cucumber, sliced
- •tomato, large slice
Instructions
- Scoop the avocado into a medium bowl. Season with salt and add the lemon juice. Mash until smooth.
- Spread the mayonnaise over 1 slice of toast. Spread the avocado on top, then add the cucumber slices and tomato slice. Top with the remaining piece of toast.
