  • ½ avocado
  • kosher salt, to taste
  • 1 teaspoon lemon juice
  • 2 slices multigrain toast, divided
  • 1 teaspoon mayonnaise
  • 1 persian cucumber, sliced
  • tomato, large slice

Instructions

  • Scoop the avocado into a medium bowl. Season with salt and add the lemon juice. Mash until smooth.
  • Spread the mayonnaise over 1 slice of toast. Spread the avocado on top, then add the cucumber slices and tomato slice. Top with the remaining piece of toast.
  • Enjoy!
