Lavender Trail Mix

Ingredients

  • 1 cup marcona almonds
  • 1 cup raw cashews
  • 3 tablespoons dried culinary-grade lavender buds
  • 1 tablespoon kosher salt
  • 2 tablespoons sugar
  • 1 tablespoon olive oil
  • ½ cup dried blueberries
  • ½ cup dried pears, chopped
  • 1 cup white chocolate chips

Instructions

  • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.
  • Spread the almonds and cashews in a single layer on the prepared baking sheet. Roast for 15 minutes, until the cashews start to brown.
  • In a spice grinder, combine the lavender flowers, salt, and sugar and grind into a soft powder.
  • Transfer the roasted nuts to a large bowl and toss with the olive oil to coat. Add half of the lavender mixture and toss to coat evenly. Let cool to room temperature.
  • Once the nuts have cooled, add the dried blueberries, pears, white chocolate chips, and remaining lavender powder. Toss until well-mixed.
  • The trail mix will keep in an airtight container at room temperature for up to 1 week.
