  • 1 cup rotisserie chicken, shredded
  • 4 tablespoons BBQ sauce, divided
  • 1 whole wheat pita bread
  • 1 handful shredded mozzarella cheese
  • 1 handful red onion, sliced
  • fresh cilantro, for garnish

Instructions

  • Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
  • In a medium bowl, toss the chicken with 2 tablespoons of BBQ sauce until well-coated.
  • Place the pita bread on the prepared baking sheet and spread the remaining 2 tablespoons of BBQ sauce on top. Scatter the chicken over the pita, then top with shredded mozzarella and red onion.
  • Bake for 15-20 minutes, or until the cheese is melted and the chicken is heated through.
  • Garnish with fresh cilantro, then slice and serve.
  • Enjoy!
