- •½ cucumber - peeled, seeded, and diced
- •1 large ripe nectarine, diced
- •3 tablespoons chopped fresh cilantro
- •1 tablespoon olive oil
- •3 tablespoons crumbled goat cheese
Instructions
- Mix tomatoes, cucumber, nectarine, and cilantro together in a bowl. Stir in olive oil gently. Sprinkle goat cheese over salad.
