Fruit, Nut And Seed Flapjacks

Ingredients

  • 2 cups oats
  • 2 tablespoons coconut shavings
  • ¼ cup mixed nut, chopped
  • ¼ cup dried fruit, of choice
  • 3 tablespoons chia seeds
  • 1 ½ tablespoons ground flaxseed
  • ⅓ cup coconut oil, melted
  • 4 tablespoons milk
  • pumpkin seed, optional

Instructions

  • In a big bowl, mix together oats, chia seeds, flaxseed, coconut shavings, nuts and dried fruit.
  • Combine melted coconut oil and milk. Once combined, add remaining ingredients and mix to form a ‘dough-like’ mixture.
  • Spread evenly on a parchment lined baking tray, topping with pumpkin seeds if desired.
  • Bake at 350’F for 15 - 20 minutes, or until golden-brown.
  • Let cool, then cut into squares and serve.
