- •1 cup water
- •½ cup extra-virgin olive oil
- •kosher salt, to taste
- •2 cups refried black bean, warm
- •½ cup queso fresco, crumbled
- •8 tablespoons crema fresca
Instructions
- In a large bowl, mix together the flour, water, olive oil, and salt. Knead for about 2 minutes, or until a soft dough forms.
- Divide the dough into 8 equal portions and shape into balls. Cover the dough balls with a kitchen towel and let rest for 30 minutes.
- Stretch the dough balls carefully into rough circles or ovals, about 6 inches in diameter.
- Heat a large skillet over medium heat. Working one at a time, cook the baleadas for about 1 minute on each side, until the center rises and small brown spots appear.
- Top each baleada with black beans and queso fresco, then finish with a drizzle of crema. Serve immediately.
