Honduran Baleadas

Ingredients

  • 2 cups all-purpose flour
  • 1 cup water
  • ½ cup extra-virgin olive oil
  • kosher salt, to taste
  • 2 cups refried black bean, warm
  • ½ cup queso fresco, crumbled
  • 8 tablespoons crema fresca

Instructions

  • In a large bowl, mix together the flour, water, olive oil, and salt. Knead for about 2 minutes, or until a soft dough forms.
  • Divide the dough into 8 equal portions and shape into balls. Cover the dough balls with a kitchen towel and let rest for 30 minutes.
  • Stretch the dough balls carefully into rough circles or ovals, about 6 inches in diameter.
  • Heat a large skillet over medium heat. Working one at a time, cook the baleadas for about 1 minute on each side, until the center rises and small brown spots appear.
  • Top each baleada with black beans and queso fresco, then finish with a drizzle of crema. Serve immediately.
  • Enjoy!
