  • 2 tablespoons butter
  • 3 pounds yellow squash, chopped
  • 2 medium onions, chopped
  • 1 cup shredded sharp Cheddar cheese
  • 1 cup mayonnaise
  • 3 large eggs, beaten
  • 12 saltine crackers, crushed
  • 1 (1 ounce) package dry Ranch-style dressing mix
  • 1 teaspoon salt
  • 2 cups dry bread stuffing mix
  • 0.5 cup melted butter

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Make the casserole: Melt 2 tablespoons butter in a large saucepan over medium-high heat. Add squash and onions; cook and stir until tender, 5 to 10 minutes. Remove from the heat and stir in Cheddar cheese, mayonnaise, eggs, crackers, ranch dressing mix, and salt. Spread squash mixture into a medium baking dish.
  • Make the topping: Mix stuffing and melted butter together in a bowl. Sprinkle over squash mixture.
  • Bake in the preheated oven until firm and lightly browned, 20 to 30 minutes.
