- •1 cup milk
- •½ cup butter
- •1 pinch salt
- •1 pinch fresh thyme
- •1 cup flour
- •5 eggs
- •4 cloves garlic, finely chopped
- •nutmeg, and black pepper
- •1 cup mushroom
- •½ cup broccoli
Instructions
- Cook broccoli in boiling water for 3 minutes. Cool in cold water. Set aside.
- Bake the mushrooms in the oven at 180º C for 10 minutes. Set aside.
- Combine the milk, butter, salt, chopped garlic and nutmeg in a saucepan. Boil, then reduce the heat and pour in all the flour and mix well with a spatula without removing from the heat for 4 minutes.
- Remove from the heat and transfer to a bowl.
- Add the black pepper and add the eggs, one at a time, incorporating each completely before adding the next.
- Finely chop mushrooms and broccoli and add to mixture. Mix well.
- With two spoons take small portions in the shape of balls or quenelle and fry in plenty of olive oil.
- Serve warm.
