- •15 oz black beans, drained
- •½ cup chopped red onion
- •15 oz corn, drained
- •¼ cup chopped scallions
- •¾ cup chopped tomatoes
Instructions
- Make the dressing: Add the avocado, garlic, salt, pepper, olive oil, cilantro, and lime juice to a blender and blend until smooth.
- Make the salad: In a large bowl, combine the lettuce, bell peppers, cilantro, black beans, red onion, corn, scallions, and tomatoes.
- Pour the dressing over the salad and toss to combine.
