  • 1 teaspoon vegetable oil
  • 1 pound ground turkey
  • 0.5 medium onion, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups chicken broth
  • 1 (16 ounce) can refried beans
  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 1 (15.5 ounce) can kidney beans, rinsed and drained
  • 2.5 tablespoons chili powder
  • 1 tablespoon minced garlic
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon ground cumin
  • salt and ground black pepper to taste
  • 2 tablespoons shredded Cheddar cheese

Instructions

  • Heat vegetable oil in a large pot over medium-high heat. Add turkey; cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard any excess grease.
  • Add onion to the pot; cook and stir until translucent, about 5 minutes. Stir in tomatoes, broth, all beans, chili powder, garlic, paprika, oregano, cumin, salt, and pepper; bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes.
  • Ladle into bowls and garnish with Cheddar cheese.
