- •1 teaspoon vegetable oil
- •1 pound ground turkey
- •0.5 medium onion, chopped
- •1 (28 ounce) can crushed tomatoes
- •2 cups chicken broth
- •1 (16 ounce) can refried beans
- •1 (15.5 ounce) can black beans, rinsed and drained
- •1 (15.5 ounce) can kidney beans, rinsed and drained
- •2.5 tablespoons chili powder
- •1 tablespoon minced garlic
- •1 teaspoon paprika
- •1 teaspoon dried oregano
- •0.5 teaspoon ground cumin
- •salt and ground black pepper to taste
- •2 tablespoons shredded Cheddar cheese
Instructions
- Heat vegetable oil in a large pot over medium-high heat. Add turkey; cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard any excess grease.
- Add onion to the pot; cook and stir until translucent, about 5 minutes. Stir in tomatoes, broth, all beans, chili powder, garlic, paprika, oregano, cumin, salt, and pepper; bring to a boil. Reduce the heat to low, cover, and simmer for 30 minutes.
- Ladle into bowls and garnish with Cheddar cheese.
