Ingredients

  • 0.25 cup butter
  • 6 medium zucchini, sliced
  • 2 large tomatoes, cut into chunks
  • 1 large onion, sliced
  • 4 slices cooked bacon
  • salt and pepper to taste
  • 0.25 cup water
  • 1 cup bread crumbs
  • 1 teaspoon soy sauce
  • 1 cup shredded Cheddar cheese
  • 0.5 grated Parmesan cheese

Instructions

  • Melt butter in a large skillet over medium-high heat. Mix in zucchini, tomatoes, onion, and bacon. Season with salt and pepper; pour in water. Cover and cook, stirring occasionally, until vegetables are tender, about 10 minutes.
  • Stir bread crumbs and soy sauce into the skillet. Mix in Cheddar cheese. Cover and continue cooking until cheese is melted, about 2 minutes. Sprinkle with Parmesan cheese to serve.
