- •4 slices cooked bacon
- •salt and pepper to taste
- •0.25 cup water
- •1 cup bread crumbs
- •1 teaspoon soy sauce
- •1 cup shredded Cheddar cheese
- •0.5 grated Parmesan cheese
Instructions
- Melt butter in a large skillet over medium-high heat. Mix in zucchini, tomatoes, onion, and bacon. Season with salt and pepper; pour in water. Cover and cook, stirring occasionally, until vegetables are tender, about 10 minutes.
- Stir bread crumbs and soy sauce into the skillet. Mix in Cheddar cheese. Cover and continue cooking until cheese is melted, about 2 minutes. Sprinkle with Parmesan cheese to serve.
