Lemon Chicken And Asparagus Stir-Fry

Ingredients

  • ½ tablespoon olive oil
  • 2 boneless, skinless chicken breasts, sliced
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon minced garlic
  • 4 oz asparagus
  • ½ lemon, zested, plus more for garnish
  • ½ lemon, juiced
  • 3 tablespoons soy sauce
  • cooked rice, for serving

Instructions

  • Season the chicken with the salt and pepper. Heat the olive oil in a large pan over medium-high heat. Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes. Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.
  • Add the asparagus, lemon zest, and lemon juice and toss to combine. Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce.
  • Serve the stir-fry over rice with more lemon zest on top.
  • Enjoy!
