- •½ tablespoon olive oil
- •2 boneless, skinless chicken breasts, sliced
- •1 teaspoon kosher salt
- •½ teaspoon freshly ground black pepper
- •1 tablespoon minced garlic
- •4 oz asparagus
- •½ lemon, zested, plus more for garnish
- •½ lemon, juiced
- •3 tablespoons soy sauce
- •cooked rice, for serving
Instructions
- Season the chicken with the salt and pepper. Heat the olive oil in a large pan over medium-high heat. Add the chicken and stir-fry until no longer pink on the outside, about 4 minutes. Add the garlic and continue cooking until the chicken is cooked through, about 4 minutes more.
- Add the asparagus, lemon zest, and lemon juice and toss to combine. Cook until the asparagus is tender, about 2 minutes, then stir in the soy sauce.
- Serve the stir-fry over rice with more lemon zest on top.
