Ingredients

- •1 tablespoon olive oil
- •1 lb ground chicken
- •1 teaspoon ground black pepper
- •½ tablespoon light soy sauce
- •½ teaspoon salt
- •1 medium size onion, chopped
- •1 jalapeño, seeded and chopped
- •2 tablespoons mayonnaise
- •1 tablespoon fresh lemon juice
- •romaine lettuce
- •green onion, chopped, for garnishing (optional)
- •lemon, sliced, optional
Instructions
- In a pan on high heat, cook ground chicken on high until lightly browned. Once cooked, add black pepper , soy sauce and salt.
- Continue to stir until the chicken has absorbed juice and become golden-brown. To this, add chopped onion and jalapeño.
- Let the onions cook slowly until about half done. At this point, add mayonnaise and lemon juice into the mixture and mix well.
- Garnish with chopped green onions, scoop into lettuce cups, garnish if desired, and serve.
