- •8 large eggs
- •teal food coloring, as needed
- •¼ cup mayonnaise
- •2 teaspoons mustard
- •3 strips bacon, cooked and chopped
- •1 jalapeño, minced
- •2 teaspoons hot sauce
- •kosher salt, to taste
- •1 teaspoon paprika
Instructions
- Place the eggs in a medium pot and fill with cold water until the eggs are just covered. Bring the water to a boil, then cover the pot, remove from the heat, and let sit for 10 minutes. Meanwhile, prepare an ice bath in a large bowl. Transfer the eggs to the ice bath and let sit for 3 minutes.
- Use your hand to roll the eggs carefully on a flat surface to create cracks.
- Place each cracked egg in a small zip-top bag and add a few drops of teal food coloring. Seal the bags and gently roll the eggs to coat evenly in the food coloring. Let sit for 30 minutes, then remove the eggs from the bags and rinse.
- Remove the cracked eggshells from the eggs and cut in half lengthwise. Scoop the yolks into a medium bowl. Arrange the whites on a serving platter.
- To the bowl with the yolks, add the mayonnaise, mustard, bacon, jalapeño, hot sauce, and salt to taste. Mix well to combine.
- Scoop the egg yolk filling into the egg whites and garnish with paprika.
