Hanukkah Potato Latkes

Ingredients

  • 4 large potatoes, peeled and grated, drained
  • ½ large onion, grated and drained
  • 1 egg
  • ¼ cup flour
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • oil
  • 1 scallion

Instructions

  • In a bowl, combine potatoes, onion, egg, flour, salt and pepper. Mix well and form into palm size circles.
  • Heat oil to 380°F before placing the latkes in the pan. Then, fry for about 4-5 minutes per side, until nice and brown.
  • Remove from the pan and place on a paper towel-lined plate to drain the excess oil.
  • Garnish with chopped up green scallions. Serve.
