- •4 medium zucchinis
- •salt, to pull moisture from the zucchini
- •¾ cup bread crumbs
- •¾ cup shredded cheddar cheese
- •2 large eggs
- •1 tablespoon garlic powder
- •1 teaspoon pepper
Instructions
- Preheat oven to 400°F (200˚C). Grease a baking sheet with nonstick spray.
- Grate the zucchini into a bowl and salt generously. Allow the zucchini to sit for 20 minutes as the salt draws out moisture.
- Turn the zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.
- Transfer the zucchini back into the bowl and add the bread crumbs, cheese, eggs, garlic powder, and pepper. Mix together until well-combined.
- Roll a tablespoon at a time of the zucchini mixture into tots. Place on the prepared baking sheet.
- Bake the tots for 20-25 minutes, or until crispy. Serve warm.
