Adaptogenic Maple Oats

Ingredients

  • ½ cup rolled oats
  • 1 cup milk
  • 1 cup water
  • 1 tablespoon chia seeds
  • 1 tablespoon toasted flaked almonds
  • 1 teaspoon bee pollen
  • 1 teaspoon lions mane mushroom powder
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup

Instructions

  • In a small saucepan over low heat, combine the oats and chia seeds with ½ cup (115ml) boiling water and the milk or plant-based milk. Cook for 10 minutes, stirring constantly.
  • Remove the saucepan from the heat and stir in the toasted almonds, bee pollen (if using), mushroom powder, coconut oil and maple syrup to taste.
  • Pour into a serving bowl and top with additional flaked almonds, chia seeds and a drizzle of maple syrup.
