  • 1.25 cups margarine
  • 0.75 cup firmly packed brown sugar
  • 0.5 cup white sugar
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.125 teaspoon ground cloves
  • 3 cups rolled oats
  • 2 ripe bananas, sliced
  • 1.5 cups raisins
  • 1 cup flaked coconut

Instructions

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together margarine, brown sugar, and white sugar. Beat in egg and vanilla. Combine flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into creamed mixture until well blended. Stir in oats, bananas, raisins, and coconut, one at a time using a wooden spoon. Drop by rounded spoonfuls 2 inches apart onto the prepared cookie sheets.
  • Bake for 11 to 13 minutes in the preheated oven. Allow cookies to cool on baking sheets for 1 minute before removing to a wire rack to cool completely.
