- •2 large zucchini, cut into 1/2 inch slices
- •0.75 cup margarine
- •salt and pepper to taste
Instructions
- Place beaten eggs in a bowl. Place flour on a dish. Dip zucchini in the eggs, then dredge in the flour to coat.
- Melt margarine in a large skillet over medium heat. Fry the coated zucchini slices in the margarine until lightly browned. Season with salt and pepper.
