  • 2 eggs, beaten
  • 2 cups all-purpose flour
  • 2 large zucchini, cut into 1/2 inch slices
  • 0.75 cup margarine
  • salt and pepper to taste

Instructions

  • Place beaten eggs in a bowl. Place flour on a dish. Dip zucchini in the eggs, then dredge in the flour to coat.
  • Melt margarine in a large skillet over medium heat. Fry the coated zucchini slices in the margarine until lightly browned. Season with salt and pepper.
