Instructions
- Combine zucchini and onion in a large bowl.
- Mix together flour, cornmeal, salt, pepper, and garlic powder in a small bowl until well combined.
- Pour flour mixture over zucchini mixture; cover the bowl and shake until vegetables are well coated. Let mixture sit until a batter forms on vegetables, about 30 minutes.
- Heat oil in a medium skillet over medium heat. Fry vegetables in hot oil until golden brown, turning to cook evenly.
