  • 3 carrots, peeled
  • 3 parsnips, peeled
  • 2 tablespoons olive oil
  • 0.25 cup honey
  • salt and ground black pepper to taste

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Arrange carrots and parsnips in a baking dish; drizzle with olive oil and toss to evenly coat. Pour honey over top and season with salt and pepper; toss again to coat.
  • Bake in the preheated oven until vegetables are very tender, about 40 minutes.
