Ingredients

  • 1 tablespoon vegetable oil
  • 8 ounces bulk Italian sausage
  • 1 potato, peeled and diced
  • 0.25 onion, chopped
  • 1 cup frozen mixed vegetables
  • salt and pepper to taste
  • 0.25 cup shredded Cheddar cheese

Instructions

  • Heat oil in a large skillet over medium heat. Cook and stir sausage in hot oil until crumbly and just slightly pink, about 5 minutes. Add potato and onion; cook, stirring occasionally, until potatoes are tender and lightly browned, 10 to 15 minutes.
  • Stir in frozen vegetables and cook until heated through. Season with salt and pepper. Sprinkle with Cheddar cheese to serve.
