Ingredients

  • 1 tablespoon neutral oil
  • 1 clove garlic, minced
  • ¼ cup diced white onion
  • 1 carrot, sliced
  • ¼ cup frozen corn
  • ¼ cup frozen peas
  • 1 cup cooked brown rice, cooked
  • 1 cup shredded rotisserie chicken
  • 1 large egg, scrambled
  • 1 tablespoon soy sauce
  • ½ tablespoon sesame oil
  • salt, to taste
  • pepper, to taste
  • sesame seed, for garnish
  • sliced green onion, for garnish

Instructions

  • In a large skillet, heat the oil over medium heat. Add the garlic, onion, carrot, corn, and peas. Cook until the carrot is tender, stirring occasionally.
  • Add the brown rice, chicken, egg, soy sauce, sesame oil, salt, and pepper to taste, and stir. Cook for another minute, or until everything is heated through.
  • Garnish with a sprinkle of sesame seeds and green onions.
  • Enjoy!
