One-Pan Spicy Prawns and Rice

Ingredients

  • olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red chile, sliced
  • 1 red bell pepper, seeded and diced
  • ¼ lb chorizo, sliced
  • ½ teaspoon ground turmeric
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 ¼ cups long grain rice
  • 1 ¾ cups water
  • ⅔ cup peas
  • ⅓ lb prawns, peeled and deveined

Instructions

  • In a large pan, heat a drizzle of olive oil over medium-high heat. Add the onions, garlic, chile, and red pepper and sauté for about a minute, until starting to soften.
  • Add the chorizo and continue to cook for another minute or two.
  • Stir in the turmeric, salt, pepper, and rice.
  • Pour in the water, then cover and simmer for 20 minutes, until the rice is tender and the water has been absorbed.
  • Stir in the peas and prawns and cook until prawns are pink and no longer translucent, 3-4 minutes.
  • Enjoy!
