Ingredients

- •olive oil
- •1 onion, diced
- •3 cloves garlic, minced
- •1 red chile, sliced
- •1 red bell pepper, seeded and diced
- •¼ lb chorizo, sliced
- •½ teaspoon ground turmeric
- •1 teaspoon salt
- •½ teaspoon pepper
- •1 ¼ cups long grain rice
- •1 ¾ cups water
- •⅔ cup peas
- •⅓ lb prawns, peeled and deveined
Instructions
- In a large pan, heat a drizzle of olive oil over medium-high heat. Add the onions, garlic, chile, and red pepper and sauté for about a minute, until starting to soften.
- Add the chorizo and continue to cook for another minute or two.
- Stir in the turmeric, salt, pepper, and rice.
- Pour in the water, then cover and simmer for 20 minutes, until the rice is tender and the water has been absorbed.
- Stir in the peas and prawns and cook until prawns are pink and no longer translucent, 3-4 minutes.
