- •0.5 cup white sugar
- •3 teaspoons baking powder
- •1 teaspoon ground cinnamon
- •0.5 teaspoon salt
- •0.75 cup apple juice
- •0.33333334326744 cup vegetable oil
- •1 large egg
- •1 cup apples - peeled, cored and finely diced
Instructions
- Preheat the oven to 400 degrees F (205 degrees C). Grease the bottoms only of 12 muffin cups or line with baking cups.
- In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well. In a small bowl, combine apple juice, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened and a few lumps remain. Stir in chopped apples. Fill the prepared muffin cups 2/3 full.
- Bake in the preheated oven for 18 to 22 minutes or until a toothpick inserted in the center comes out clean. Cool for 1 minute before removing from the pan. Serve warm.
