- •1 tablespoon unsalted butter, room temperature, divided
- •3 large eggs, whites and yolks separated
- •¼ cup light brown sugar
- •½ tablespoon McCormick® vanilla extract
- •3.5 oz chocolate, divided, 70%
- •1 tablespoon all-purpose flour
- •vanilla ice cream, for serving (optional)
Instructions
- Preheat the oven to 400°F (200°C). Grease a 9-inch round baking dish with ½ tablespoon of butter.
- In a medium bowl, whip the egg whites with an electric hand mixer on medium-high speed until stiff peaks form, 2–3 minutes.
- In a small, microwave-safe bowl, combine three-quarters of the chocolate bar with the remaining ½ tablespoon of butter. Microwave in 30-second intervals, stirring between, until melted and smooth.
- In a large bowl, whip together the egg yolks, brown sugar, and McCormick® Vanilla Extract with an electric hand mixer on medium speed until light and fluffy, about 2 minutes. Add the melted chocolate and flour and mix until smooth. Gently fold in the whipped egg whites with a rubber spatula until fully incorporated.
- Pour the batter into the prepared baking dish and press the remaining quarter of the chocolate bar into the center of the pudding.
- Bake the pudding for 6 minutes, until the edges are cooked but the center is still gooey.
- Remove the pudding from the oven and scoop vanilla ice cream onto the center, if desired. Serve warm.
