- •1 (4 pound) butternut squash - peeled, seeded, and cubed
- •6 ounces crumbled blue cheese
- •0.5 cup Italian bread crumbs
- •0.33333334326744 yellow onion, minced
- •0.25 cup extra-virgin olive oil
- •1 tablespoon minced fresh thyme
- •sea salt and ground black pepper to taste
Instructions
- Preheat the oven to 425 degrees F (220 degrees C).
- Toss squash, blue cheese, 1/2 cup bread crumbs, onion, olive oil, and thyme in a large mixing bowl. Season with sea salt and pepper. Pour mixture into a large baking dish. Sprinkle with remaining 1/4 cup bread crumbs.
- Bake in the preheated oven until top is lightly browned, 35 to 40 minutes.
