Ingredients

  • 1 (4 pound) butternut squash - peeled, seeded, and cubed
  • 6 ounces crumbled blue cheese
  • 0.5 cup Italian bread crumbs
  • 0.33333334326744 yellow onion, minced
  • 0.25 cup extra-virgin olive oil
  • 1 tablespoon minced fresh thyme
  • sea salt and ground black pepper to taste

Instructions

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Toss squash, blue cheese, 1/2 cup bread crumbs, onion, olive oil, and thyme in a large mixing bowl. Season with sea salt and pepper. Pour mixture into a large baking dish. Sprinkle with remaining 1/4 cup bread crumbs.
  • Bake in the preheated oven until top is lightly browned, 35 to 40 minutes.
