  • ½ cup unsalted butter, softened
  • ½ cup caster sugar
  • 1 cup self-raising flour
  • 1 large banana
  • ¾ teaspoon baking soda
  • 1 egg

Instructions

  • Preheat the oven to 180°C.
  • Whisk the softened butter and caster sugar together until light and fluffy
  • Add the egg and a tablespoon of the flour whisk till combined. Then, mash the banana.
  • Add the mashed banana and flour into the wet ingredients and fold them in.
  • Pour batter into loaf pan and bake for 45-50 mins.
  • Cool and serve.
