Ingredients

  • 1 cup water
  • 0.75 cup white sugar
  • 1 tablespoon mixed spice
  • 1 tablespoon cinnamon
  • 1.25 cups chopped mixed dried fruit
  • 1.25 cups golden raisins
  • 1 cup margarine
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 eggs, beaten

Instructions

  • In a saucepan, combine water, sugar, mixed spice, cinnamon, mixed fruit, golden raisins, and margarine. Bring to a boil, then simmer for 1 minute. Remove from the heat and stir in flour, baking soda, and eggs. Pour into a microwave-safe bowl.
  • Place the bowl into the microwave and cook on high, uncovered, for 10 minutes. Let stand for 5 minutes before serving.
