- •0.5 cup chopped green bell pepper
- •0.5 cup chopped onion
- •2 teaspoons vegetable oil
- •0.5 teaspoon paprika
- •salt and ground black pepper to taste
- •1 cup cubed leftover corned beef
- •2 eggs
Instructions
- Preheat an air fryer to 400 degrees F (200 degrees C).
- Combine potatoes, bell pepper, and onion in a large bowl. Add vegetable oil, paprika, salt, and pepper. Stir until potatoes are evenly coated. Transfer mixture to the air fryer basket.
- Cook in the preheated air fryer for 10 minutes. Shake the basket and cook for 5 minutes. Stir in the corned beef and cook for 5 more minutes.
- Make two small wells in the mixture. Crack an egg into each well. Cook until eggs are set and cooked to desired doneness, about 3 minutes.
